Brown Butter and Sage Gnocchi

Ingredients

  • 16 oz shelf stable gnocchi
  • 6 cloves garlic
  • 1/2 bunch parsley
  • 1/2 stick unsalted butter
  • 3 sprigs fresh sage
  • Freshly grated parmesan reggiano
  • Kosher salt and freshly ground black pepper to taste

Instructions

  1. Bring four quarts of salted water to a boil. Cook the gnocchi to al dente according to the package directions and set aside.
  2. While the gnocchi is boiling, finely mince six cloves of garlic.
  3. Preheat a stainless steel skillet over medium-high heat. Add half a stick of butter to the pan and reduce heat to medium-low. Carefully brown the butter and stir regularly with a wooden spoon. The butter should be a nutty brown color when ready (approximately 10 minutes). Take care to not burn the butter - if it burns, you must start over!
  4. Add three sprigs of fresh sage and the minced garlic to the browned butter. Sauté for 20 seconds on medium heat.
  5. Add the fresh gnocchi to the pan, taking care to evenly distribute the gnocchi in a single layer across the bottom of the pan. Allow the gnocchi to cook undisturbed on medium heat for 2-3 minutes. This will create a nice, crispy bottom.
  6. Add salt and pepper to taste. Gently stir.
  7. Plate the gnocchi. Garnish with freshly grated parmesan and chopped parsley.
